Ingredients
- 1 pound shrimp (cleaned and deveined)
- 8 ounces linguine
- 1 tablespoon oil
- 1 teaspoon Cajun seasoning
- 1 cup half-and-half
- 2 tablespoons butter
- 2 cloves garlic (minced)
- Chopped parsley (for garnish)
- 1 Roma tomato (finely diced)
- ¼ cup Parmigiano Reggiano cheese
- 1 tablespoon lemon juice (optional)
- Salt and pepper to taste
Instructions
- Season the shrimp with salt, pepper, and ½ teaspoon of Cajun seasoning, and let sit while cooking linguine.
- In a large pan over medium heat, melt butter with oil.
- Add shrimp in a single layer and minced garlic. Cook for 2 minutes until shrimp turns pink, then flip and cook for an additional 1-2 minutes.
- Pour in the half-and-half and add Parmigiano Reggiano cheese. Whisk continuously for about 2 minutes until mixture reaches a gentle boil.
- Turn off heat and add cooked linguine, diced tomato, parsley, and remaining Cajun seasoning. Optionally squeeze in lemon juice.
- Mix well while sauce thickens. Adjust consistency with additional half-and-half if needed. Serve immediately.
Notes
For a richer flavor, allow the dish to rest for a few minutes before serving. Pair with a crisp side salad or garlic bread.
