Description

A delightful shrimp and crab pasta dish featuring a creamy Cajun sauce, perfect for cozy evenings and special occasions.


Ingredients

  • 1 pound shrimp (cleaned and deveined)
  • 8 ounces linguine
  • 1 tablespoon oil
  • 1 teaspoon Cajun seasoning
  • 1 cup half-and-half
  • 2 tablespoons butter
  • 2 cloves minced garlic
  • Chopped parsley (a few sprigs)
  • 1 Roma tomato (finely diced)
  • ¼ cup Parmigiano Reggiano cheese
  • 1 tablespoon optional lemon juice
  • Salt and pepper to taste


Instructions

  1. Pat the cleaned shrimp dry with a paper towel. Season with salt, pepper, and ½ teaspoon Cajun seasoning.
  2. Cook the linguine according to package instructions and set aside.
  3. Heat a large pan over medium heat and add the oil and butter.
  4. Place the shrimp in a single layer in the pan and add the minced garlic. Cook for 2 minutes, then flip the shrimp. Cook for another 1-2 minutes until shrimp are pink and fully cooked.
  5. Pour in the half-and-half and add the Parmigiano Reggiano, bringing the mixture to a gentle boil. Whisk continuously for about 2 minutes.
  6. Turn off the heat and add the cooked pasta to the pan.
  7. Stir in the diced tomato, chopped parsley, and remaining Cajun seasoning.
  8. Optionally, squeeze in lemon juice after turning off the heat.
  9. Mix everything well, adding a splash of half-and-half if the sauce thickens too much.
  10. Serve immediately and enjoy!
