Ingredients

  • 1 pound (450 g) shrimp, peeled and deveined
  • 1 cup (150 g) cooked crab meat
  • 2 cups (200 g) tortilla chips
  • 1 cup (115 g) shredded cheddar cheese
  • 1 cup (115 g) shredded Monterey Jack cheese
  • 1 avocado, diced
  • 1 medium tomato, diced
  • 1/4 cup (30 g) sliced green onions
  • 1/4 cup (60 ml) sour cream
  • 2 tablespoon s (30 ml) lime juice
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) chili powder
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine shrimp, olive oil, ground cumin, chili powder, salt, and black pepper.
  3. Toss shrimp to coat evenly with the spices.
  4. Place shrimp on a baking sheet and bake for 8-10 minutes, or until cooked through.
  5. Remove shrimp from the oven and let cool slightly.
  6. Roughly chop the cooked shrimp.
  7. On a large ovenproof platter, arrange a layer of tortilla chips.
  8. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the chips.
  9. Evenly distribute half of the chopped shrimp and cooked crab meat over the cheese.
  10. Add another layer of tortilla chips on top.
  11. Sprinkle the remaining cheese over the second layer of chips.
  12. Add the remaining shrimp and crab meat on top.
  13. Place the platter in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  14. Remove the platter from the oven.
  15. Top the nacho stacks with diced avocado and diced tomato.
  16. Sprinkle sliced green onions over the top.
  17. Drizzle lime juice evenly over the dish.
  18. Serve the nacho stacks with sour cream on the side.
