Ingredients

  • 1 pound (454 g) (450 grams) shrimp, peeled and deveined
  • 1 pound (454 g) (450 grams) crab meat, cooked and shredded
  • 2 tablespoon s (30 ml) olive oil
  • 1 large onion, thinly sliced
  • 1 large red bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) chili powder
  • Salt, to taste
  • Black pepper, to taste
  • 8 flour tortillas
  • 1 cup (240 ml) (115 grams) shredded cheddar cheese
  • 1 cup (240 ml) (115 grams) shredded Monterey Jack cheese
  • 1 avocado, sliced
  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) fresh cilantro, chopped
  • 1 lime, cut into wedges


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the onion, red bell pepper, and green bell pepper to the skillet.
  3. Sauté the vegetables until they are soft, about 5-7 minutes.
  4. Add the minced garlic to the skillet and cook for 1 minute.
  5. Remove the vegetables from the skillet and set aside.
  6. Add the remaining olive oil to the skillet.
  7. Add the shrimp to the skillet, seasoning with cumin, chili powder, salt, and black pepper.
  8. Cook the shrimp for 3-4 minutes, until pink and opaque.
  9. Add the cooked crab meat to the shrimp and stir well.
  10. Return the sautéed vegetables to the skillet, mixing everything together.
  11. Warm the flour tortillas in a separate dry skillet or microwave.
  12. Place a portion of the shrimp-crab mixture onto each tortilla.
  13. Sprinkle each roll with cheddar and Monterey Jack cheese.
  14. Add avocado slices on top of the cheese.
  15. Roll the tortillas tightly around the filling.
  16. Serve the fajita rolls with sour cream and chopped cilantro.
  17. Garnish with lime wedges on the side.
