Ingredients
- 1 pound (454 g) (450 grams) shrimp, peeled and deveined
- 1 pound (454 g) (450 grams) crab meat, cooked and shredded
- 2 tablespoon s (30 ml) olive oil
- 1 large onion, thinly sliced
- 1 large red bell pepper, thinly sliced
- 1 large green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) (5 grams) ground cumin
- 1 teaspoon (5 ml) (5 grams) chili powder
- Salt, to taste
- Black pepper, to taste
- 8 flour tortillas
- 1 cup (240 ml) (115 grams) shredded cheddar cheese
- 1 cup (240 ml) (115 grams) shredded Monterey Jack cheese
- 1 avocado, sliced
- 1/2 cup (120 ml) sour cream
- 1/4 cup (60 ml) fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and green bell pepper to the skillet.
- Sauté the vegetables until they are soft, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for 1 minute.
- Remove the vegetables from the skillet and set aside.
- Add the remaining olive oil to the skillet.
- Add the shrimp to the skillet, seasoning with cumin, chili powder, salt, and black pepper.
- Cook the shrimp for 3-4 minutes, until pink and opaque.
- Add the cooked crab meat to the shrimp and stir well.
- Return the sautéed vegetables to the skillet, mixing everything together.
- Warm the flour tortillas in a separate dry skillet or microwave.
- Place a portion of the shrimp-crab mixture onto each tortilla.
- Sprinkle each roll with cheddar and Monterey Jack cheese.
- Add avocado slices on top of the cheese.
- Roll the tortillas tightly around the filling.
- Serve the fajita rolls with sour cream and chopped cilantro.
- Garnish with lime wedges on the side.
