Ingredients
- Shrimp, peeled and deveined – 1 pound (454 g) (450 grams)
- Crab meat, cooked – 1 cup (240 ml) (120 grams)
- Tortillas, large flour – 8 pieces
- Bell peppers, assorted colors, sliced – 2 cup (480 ml) s (240 grams)
- Onion, sliced – 1 cup (240 ml) (150 grams)
- Garlic, minced – 2 cloves
- Cream cheese, softened – 8 ounce (227 g) s (225 grams)
- Cheddar cheese, shredded – 1 cup (240 ml) (100 grams)
- Lime juice – 2 tablespoon (30 ml) s (30 milliliters)
- Olive oil – 2 tablespoon (30 ml) s (30 milliliters)
- Cumin powder – 1 teaspoon (5 ml) (2 grams)
- Chili powder – 1 teaspoon (5 ml) (2 grams)
- Salt – 1 teaspoon (5 ml) (5 grams)
- Black pepper – 1/2 teaspoon (3 ml) (1 gram)
- Cilantro, chopped – 1/4 cup (60 ml) (15 grams)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the sliced bell peppers and onion to the skillet.
- Sauté the vegetables until they are soft, about 5 minutes.
- Add the minced garlic to the skillet and cook for another 1 minute.
- Transfer the vegetables to a bowl and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the shrimp to the skillet and season with cumin, chili powder, salt, and black pepper.
- Cook the shrimp until pink and opaque, about 3-4 minutes per side.
- Remove the shrimp from the skillet and chop them into bite-sized pieces.
- In a large mixing bowl, combine the chopped shrimp, crab meat, and cooked vegetables.
- Add the cream cheese, cheddar cheese, lime juice, and chopped cilantro to the bowl.
- Mix everything together until well combined.
- Lay out the tortillas on a flat surface.
- Divide the shrimp and crab mixture evenly among the tortillas.
- Roll each tortilla tightly around the filling.
- Place the rolled tortillas seam-side down on a baking sheet.
- Bake in the preheated oven for 15-20 minutes, until the tortillas are golden brown.
