Ingredients

  • 1 cup yellow cornmeal (150g)
  • 1/2 cup all-purpose flour (65g)

  • 1 cup buttermilk (240ml)
  • 2 large eggs
  • 1/4 cup vegetable oil (60ml)
  • 1/2 pound shrimp, peeled and deveined (225g)
  • 1 tablespoon olive oil (15ml)
  • 1/2 cup chopped onion (75g)
  • 1/2 cup chopped celery (75g)
  • 1/2 cup chopped green bell pepper (75g)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (1g)
  • 1 teaspoon dried parsley (1g)
  • 1/2 teaspoon smoked paprika (1g)
  • 1/4 teaspoon cayenne pepper (optional) (0.5g)
  • 1/2 cup chicken broth (120ml)
  • 1/4 cup chopped green onions (25g)
  • 1/4 cup chopped fresh parsley (15g)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine 1 cup of yellow cornmeal, 1/2 cup of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  3. In a separate bowl, whisk together 1 cup of buttermilk and 2 large eggs.
  4. Add 1/4 cup of vegetable oil to the buttermilk and egg mixture, and mix well.
  5. Pour the wet ingredients into the dry ingredients, stirring until just combined.
  6. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
  7. Add 1/2 cup of chopped onion, 1/2 cup of chopped celery, and 1/2 cup of chopped green bell pepper to the skillet. Sauté until softened.
  8. Stir in 2 minced garlic cloves, 1 teaspoon of dried thyme, 1 teaspoon of dried parsley, 1/2 teaspoon of smoked paprika, and 1/4 teaspoon of cayenne pepper, cooking for 1 minute.
  9. Add 1/2 pound of peeled and deveined shrimp to the skillet and cook until they are pink and opaque.
  10. Pour in 1/2 cup of chicken broth, stirring to combine all ingredients in the skillet.
  11. Gently fold the cornbread batter into the shrimp and vegetable mixture in the skillet.
  12. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cornbread is golden and cooked through.
  13. Remove the skillet from the oven and sprinkle 1/4 cup of chopped green onions and 1/4 cup of chopped fresh parsley over the top.
  14. Let the skillet rest for a few minutes before serving.
