Ingredients
- 1 cup yellow cornmeal (150g)
- 1/2 cup all-purpose flour (65g)
- 1 tablespoon baking powder (15g)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (1g)
- 1 cup buttermilk (240ml)
- 2 large eggs
- 1/4 cup vegetable oil (60ml)
- 1/2 pound shrimp, peeled and deveined (225g)
- 1 tablespoon olive oil (15ml)
- 1/2 cup chopped onion (75g)
- 1/2 cup chopped celery (75g)
- 1/2 cup chopped green bell pepper (75g)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (1g)
- 1 teaspoon dried parsley (1g)
- 1/2 teaspoon smoked paprika (1g)
- 1/4 teaspoon cayenne pepper (optional) (0.5g)
- 1/2 cup chicken broth (120ml)
- 1/4 cup chopped green onions (25g)
- 1/4 cup chopped fresh parsley (15g)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine 1 cup of yellow cornmeal, 1/2 cup of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- In a separate bowl, whisk together 1 cup of buttermilk and 2 large eggs.
- Add 1/4 cup of vegetable oil to the buttermilk and egg mixture, and mix well.
- Pour the wet ingredients into the dry ingredients, stirring until just combined.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
- Add 1/2 cup of chopped onion, 1/2 cup of chopped celery, and 1/2 cup of chopped green bell pepper to the skillet. Sauté until softened.
- Stir in 2 minced garlic cloves, 1 teaspoon of dried thyme, 1 teaspoon of dried parsley, 1/2 teaspoon of smoked paprika, and 1/4 teaspoon of cayenne pepper, cooking for 1 minute.
- Add 1/2 pound of peeled and deveined shrimp to the skillet and cook until they are pink and opaque.
- Pour in 1/2 cup of chicken broth, stirring to combine all ingredients in the skillet.
- Gently fold the cornbread batter into the shrimp and vegetable mixture in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cornbread is golden and cooked through.
- Remove the skillet from the oven and sprinkle 1/4 cup of chopped green onions and 1/4 cup of chopped fresh parsley over the top.
- Let the skillet rest for a few minutes before serving.
