Description

A refreshing shrimp ceviche with a tangy lime dressing and vibrant vegetables, perfect for summer gatherings.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup red onion, finely chopped
  • 1 cup tomatoes, diced
  • 1/2 cucumber, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste


Instructions

  1. In a bowl, combine shrimp and lime juice. Cover and refrigerate for about 2-3 hours until the shrimp are opaque.
  2. Drain some of the lime juice and add red onion, tomatoes, cucumber, jalapeño, and cilantro to the shrimp.
  3. Season with salt and mix well.
  4. Serve immediately with tortilla chips or on its own.

Notes

Always use fresh ingredients for the best flavor. Adjust the spiciness by varying the amount of jalapeño.
