Description

A refreshing summer dish featuring marinated shrimp in citrus juices, complemented by crunchy homemade Tajin chips.

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1 medium red onion, finely chopped
  • 2 medium tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • Salt and pepper to taste
  • Homemade Tajin chips

Instructions

  1. Cut the shrimp into small, even pieces and place them in a bowl.
  2. Pour lime juice over the shrimp and stir gently to coat.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  4. Check the doneness of the shrimp; it should be opaque.
  5. Add the red onion, tomatoes, cilantro, and jalapeño to the bowl. Season with salt and pepper to taste.
  6. Gently mix all ingredients until well combined.
  7. Serve immediately with homemade Tajin chips on the side.

Notes

Serve ceviche in a chilled bowl for an added touch. Adjust the heat of the dish by modifying the jalapeño amount.
