Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 1 cup fresh lime juice
- 1/2 cup diced red onion
- 1 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1 jalapeño, finely chopped
- Salt to taste
- Avocado slices for serving
- Tortilla chips for serving
Instructions
- Boil the shrimp in salted water for 2-3 minutes until pink and cooked through. Drain and cool.
- In a bowl, combine lime juice, red onion, tomatoes, cilantro, jalapeño, and salt.
- Dice the cooled shrimp and add to the mixture. Stir well.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve with avocado slices and tortilla chips.
