Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 cup cooked white rice
- 1 ½ cups shredded cheddar cheese
- 1 cup sour cream
- ½ cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons butter, melted
- ½ cup breadcrumbs
- Fresh parsley, chopped (optional)
Instructions
- In a skillet, melt the butter over medium heat. Add the shrimp and season with salt, pepper, garlic powder, onion powder, and paprika. Cook until the shrimp turns pink, about 3-5 minutes. Remove from heat and set aside.
- Fold in the cooked rice and shredded cheddar cheese into the shrimp mixture. Stir until smooth and well-coated.
- Grease a 9×13-inch baking dish and transfer the shrimp and rice mixture into the dish, spreading it out evenly.
- Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.
- Slice and serve hot, accompanied by your favorite side dishes, such as a crisp green salad or steamed vegetables.
Notes
For best results, use fresh shrimp rather than frozen and adjust cooking times based on your oven’s characteristics.
