Ingredients
- 454 g package spaghetti (1 lb)
- 20 uncooked medium shrimp, peeled and deveined
- 2 tablespoons (30 ml) vegetable oil, divided
- salt and ground black pepper to taste
- 1 small onion, minced
- 2 cloves garlic, minced
- 240 ml skim milk (1 cup)
- 60 ml half-and-half (1/4 cup)
- 4 large eggs, beaten
- 1 cup (240 ml) grated Parmesan cheese
- 1 tablespoon (15 ml) fresh parsley
Instructions
- Fill a large pot with water, add a pinch of salt, and bring to a boil. Cook the spaghetti in the boiling water, stirring now and then, until it reaches an al dente texture, which should take around 12 minutes. Drain the pasta and place it back in the pot right away.
- While the pasta cooks, use a large skillet over medium heat to cook the shrimp. Add 1 tablespoon of vegetable oil and sprinkle with salt and pepper. Stir the shrimp until they are almost fully cooked, roughly 5 minutes. Transfer the shrimp to the pasta and cover to keep it warm.
- In the same skillet, heat another tablespoon of vegetable oil. Add the minced onion and sauté until it becomes see-through, about 5 minutes. Introduce the garlic and cook until its aroma is released, roughly 1 minute. Stir in the milk and half-and-half, and let it warm up for about 3 minutes.
- Take 1/4 cup of the milk mixture and pour it into a bowl, then mix in the beaten eggs until the mixture is warmed. Combine this egg mixture with the shrimp and pasta, and mix in the rest of the milk mixture.
- Finish by sprinkling Parmesan cheese and fresh parsley on top.
