Ingredients

  • 1 medium-sized avocado (200g)
  • 2 tablespoons red onion, finely diced (30ml)
  • 1 teaspoon fresh lime juice (5ml)
  • 1½ teaspoons chipotle in adobo sauce, finely chopped (7.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1 pound raw shrimp (450g)
  • 1 large egg
  • 1/4 cup packed cilantro leaves (60ml)
  • 3/4 teaspoon salt (3.75ml)
  • 1/2 teaspoon ground cumin (2.5ml)
  • 1/2 teaspoon freshly cracked black pepper (2.5ml)
  • vegetable oil for the pan
  • about 8 thin slices vine-ripened tomato
  • 1 small handful baby lettuces
  • 4 burger buns, lightly toasted


Instructions

  1. Mash the avocado in a bowl, then combine it with the diced red onion, lime juice, chopped chipotle, and a pinch of salt.
  2. Use a food processor to chop the shrimp finely, then blend in the egg, cilantro, a bit of salt, cumin, and black pepper. Shape the mixture into burger patties.
  3. Warm up some vegetable oil in a pan and fry the patties until they achieve a golden-brown hue on both sides.
  4. Set a shrimp patty on each toasted bun, then layer on the guacamole, tomato slices, and baby lettuces.

Notes

  • Finely dice the red onion to evenly distribute its flavor in the guacamole.
  • Be cautious not to overcook the shrimp patties to prevent them from becoming dry.
  • Adjust the chipotle in adobo sauce to your preferred level of spiciness.
