Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 teaspoon (5 ml) garlic, minced (5 grams)
  • 1 teaspoon (5 ml) lemon juice (5 milliliters)
  • 1/4 teaspoon (1 ml) salt (1.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (0.5 grams)
  • 1 French baguette, sliced into 1/2-inch pieces
  • 2 tablespoons (30 ml) olive oil, for brushing (30 milliliters)
  • 2 medium tomatoes, diced
  • 1/4 cup (60 ml) fresh basil leaves, chopped (10 grams)
  • 1/4 cup (60 ml) vegan cheese, shredded (25 grams)
  • 1/2 teaspoon (3 ml) balsamic vinegar (2.5 milliliters)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peeled and deveined shrimp in a bowl.
  3. Add 1 tablespoon olive oil, minced garlic, lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the shrimp.
  4. Mix well to coat the shrimp evenly.
  5. Heat a skillet over medium heat.
  6. Add the shrimp mixture to the skillet.
  7. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
  8. Remove the shrimp from the skillet and set aside.
  9. Arrange the baguette slices on a baking sheet.
  10. Brush each slice with the 2 tablespoons of olive oil.
  11. Toast the baguette slices in the oven for 5-7 minutes until golden brown.
  12. In a bowl, combine the diced tomatoes, chopped basil, and shredded mozzarella cheese.
  13. Add balsamic vinegar to the tomato mixture.
  14. Season the tomato mixture with salt and pepper to taste.
  15. Top each toasted baguette slice with the tomato mixture.
  16. Place a cooked shrimp on top of each bruschetta.
  17. Serve the shrimp bruschetta immediately.
