Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 teaspoon (5 ml) garlic, minced (5 grams)
- 1 teaspoon (5 ml) lemon juice (5 milliliters)
- 1/4 teaspoon (1 ml) salt (1.5 grams)
- 1/4 teaspoon (1 ml) black pepper (0.5 grams)
- 1 French baguette, sliced into 1/2-inch pieces
- 2 tablespoons (30 ml) olive oil, for brushing (30 milliliters)
- 2 medium tomatoes, diced
- 1/4 cup (60 ml) fresh basil leaves, chopped (10 grams)
- 1/4 cup (60 ml) vegan cheese, shredded (25 grams)
- 1/2 teaspoon (3 ml) balsamic vinegar (2.5 milliliters)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the peeled and deveined shrimp in a bowl.
- Add 1 tablespoon olive oil, minced garlic, lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper to the shrimp.
- Mix well to coat the shrimp evenly.
- Heat a skillet over medium heat.
- Add the shrimp mixture to the skillet.
- Cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- Arrange the baguette slices on a baking sheet.
- Brush each slice with the 2 tablespoons of olive oil.
- Toast the baguette slices in the oven for 5-7 minutes until golden brown.
- In a bowl, combine the diced tomatoes, chopped basil, and shredded mozzarella cheese.
- Add balsamic vinegar to the tomato mixture.
- Season the tomato mixture with salt and pepper to taste.
- Top each toasted baguette slice with the tomato mixture.
- Place a cooked shrimp on top of each bruschetta.
- Serve the shrimp bruschetta immediately.
