Ingredients

  • Elb ow macaroni, cooked – 2 cup (480 ml) s (200 grams)
  • Shredded cheddar cheese – 2 cup (480 ml) s (200 grams)
  • Cream cheese, softened – 4 ounce (113 g) s (115 grams)
  • Eggs – 2 large
  • Milk – 1 cup (240 ml) (240 milliliters)
  • All-purpose flour – 2 cup (480 ml) s (240 grams)
  • Baking powder – 1 tablespoon (15 ml) (15 grams)
  • Salt – 1 teaspoon (5 ml) (5 grams)
  • Black pepper – 1/2 teaspoon (3 ml) (2.5 grams)
  • Green onions, chopped – 1/2 cup (120 ml) (50 grams)
  • Vegetable oil or melted butter, for waffle iron – as needed


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spread shrimp on a baking sheet and season with salt and pepper.
  3. Bake shrimp for 10-12 minutes until cooked through, then chop coarsely.
  4. In a large bowl, combine cooked macaroni, cheddar cheese, cream cheese, turkey bacon, shrimp, and green onions.
  5. Mix well to combine all ingredients and set aside.
  6. In a separate bowl, whisk together eggs and milk.
  7. In another bowl, combine flour, baking powder, salt, and black pepper.
  8. Gradually add the egg mixture to the dry ingredients, stirring until smooth.
  9. Preheat the waffle iron and lightly grease with vegetable oil or melted butter.
  10. Pour a portion of the batter onto the waffle iron, spreading evenly.
  11. Place a spoonful of the shrimp mac and cheese mixture onto the batter.
  12. Cover the filling with additional batter to enclose.
