Ingredients
- 1 lb shrimp
- 2 cups cooked rice
- 1 mango, diced
- 1 avocado, diced
- Mixed crunchy vegetables (bell peppers, cucumbers, carrots)
- Citrus dressing (lime or lemon juice, olive oil, salt, and pepper)
- Optional: cilantro for garnish
Instructions
- In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes.
- In a bowl, combine the cooked rice, diced mango, diced avocado, and mixed crunchy vegetables.
- Add the cooked shrimp on top of the rice and veggie mix.
- Drizzle with citrus dressing and toss gently to combine.
- Garnish with cilantro if desired and serve immediately.
Notes
For added flavor, marinate the shrimp in citrus juice before cooking. This dish can be served warm or cold.
