Description

A vibrant bowl combining shrimp, avocado, mango, and mixed vegetables, topped with a citrus dressing for a refreshing and flavorful meal.


Ingredients

  • 1 lb shrimp
  • 2 cups cooked rice
  • 1 mango, diced
  • 1 avocado, diced
  • Mixed crunchy vegetables (bell peppers, cucumbers, carrots)
  • Citrus dressing (lime or lemon juice, olive oil, salt, and pepper)
  • Optional: cilantro for garnish


Instructions

  1. In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes.
  2. In a bowl, combine the cooked rice, diced mango, diced avocado, and mixed crunchy vegetables.
  3. Add the cooked shrimp on top of the rice and veggie mix.
  4. Drizzle with citrus dressing and toss gently to combine.
  5. Garnish with cilantro if desired and serve immediately.

Notes
