Ingredients

- 2 cups (480 ml) cooked white rice (370 grams)
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1/4 cup (60 ml) red onion, finely chopped (40 grams)
- 1 tablespoon (15 ml) lime juice (15 milliliters)
- 2 tablespoons (30 ml) fresh cilantro, chopped (8 grams)
- 1 jalapeño, sliced (optional)
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, salt, and pepper.
- Heat a skillet over medium heat and add the shrimp mixture.
- Cook shrimp for 3-4 minutes on each side until pink and cooked through.
- Remove shrimp from the skillet and set aside.
- In a large bowl, combine cooked white rice, diced avocado, and diced mango.
- Add finely chopped red onion and lime juice to the rice mixture.
- Gently toss the ingredients until well mixed.
- Stir in chopped cilantro and sliced jalapeño, if using.
