  • 2 cups (480 ml) cooked white rice (370 grams)
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 1/4 cup (60 ml) red onion, finely chopped (40 grams)
  • 1 tablespoon (15 ml) lime juice (15 milliliters)
  • 2 tablespoons (30 ml) fresh cilantro, chopped (8 grams)
  • 1 jalapeño, sliced (optional)


Instructions

  1. In a bowl, combine shrimp, olive oil, chili powder, salt, and pepper.
  2. Heat a skillet over medium heat and add the shrimp mixture.
  3. Cook shrimp for 3-4 minutes on each side until pink and cooked through.
  4. Remove shrimp from the skillet and set aside.
