Ingredients
- 1 lb large shrimp, peeled and deveined
- 1-2 ripe avocados, sliced
- 1 large ripe mango, diced
- 2 cups cooked rice or quinoa
- Lime juice and zest
- Fresh cilantro, chopped
- Chili powder
- Salt and pepper to taste
Instructions
- Begin by preparing the mango salsa. In a mixing bowl, combine the diced mango with lime juice, chopped cilantro, and salt. If you enjoy a little heat, add some diced red onion or jalapeño. Mix well and set aside to chill while you prepare the shrimp.
- In another bowl, whisk together Greek yogurt, lime juice, lime zest, honey, salt, and pepper to create the lime-chili sauce.
- Season the shrimp generously with chili powder, salt, and pepper. Heat a grill pan over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and charred.
