Description

A delightful stir-fry combining shrimp, fresh asparagus, and earthy mushrooms for a quick and flavorful meal.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 8 oz mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 inch piece of ginger (grated)
  • 3 tbsp soy sauce
  • 2 tbsp olive oil (or other suitable cooking oil)
  • 1 tsp sesame oil
  • ½ tsp black pepper (to taste)


Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the olive oil, swirling it around to coat the pan.
  3. Once the oil is hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally until they turn pink and opaque.
  5. Add the mushrooms and asparagus to the skillet. Continue cooking for an additional 4-5 minutes or until the vegetables are tender but still crisp.
  6. Pour the soy sauce and sesame oil over the ingredients, stirring to coat everything evenly. Sprinkle black pepper to taste.
  7. Cook for another 1-2 minutes to allow the flavors to meld.
  8. Remove from heat and serve immediately.

Notes

For extra flavor, add red pepper flakes for heat or customize with other vegetables like bell peppers or zucchini.
