A delightful stir-fry combining shrimp, fresh asparagus, and earthy mushrooms for a quick and flavorful meal.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 1 bunch asparagus (trimmed and cut into 2-inch pieces)
- 8 oz mushrooms (sliced)
- 3 cloves garlic (minced)
- 1 inch piece of ginger (grated)
- 3 tbsp soy sauce
- 2 tbsp olive oil (or other suitable cooking oil)
- 1 tsp sesame oil
- ½ tsp black pepper (to taste)
Instructions
- Heat a large skillet over medium-high heat.
- Add the olive oil, swirling it around to coat the pan.
- Once the oil is hot, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 3-4 minutes, stirring occasionally until they turn pink and opaque.
- Add the mushrooms and asparagus to the skillet. Continue cooking for an additional 4-5 minutes or until the vegetables are tender but still crisp.
- Pour the soy sauce and sesame oil over the ingredients, stirring to coat everything evenly. Sprinkle black pepper to taste.
- Cook for another 1-2 minutes to allow the flavors to meld.
- Remove from heat and serve immediately.
Notes
For extra flavor, add red pepper flakes for heat or customize with other vegetables like bell peppers or zucchini.
