Ingredients

  • – 1/2 cup (120 ml) beef or vegetable broth
  • – 1/4 cup (60 ml) hoisin sauce
  • – 1 tablespoon (15 ml) low sodium soy sauce
  • – 2 teaspoons (10 ml) cornstarch
  • – 3 tablespoons (45 ml) olive oil, divided
  • – 1 tablespoon (15 ml) minced garlic
  • – 1 teaspoon (5 ml) minced fresh ginger
  • – 1 pound (450 g) jumbo shrimp, shelled and deveined
  • – 1 medium bell pepper, sliced
  • – 1/2 cup (120 ml) shredded carrots
  • – 2/3 cup (160 ml) sliced red onions
  • – 1 cup (240 ml) sugar snap peas
  • – 2 medium zucchini, cut into noodles
  • – Toasted sesame seeds, for garnish


Instructions

  1. In a small bowl, combine and mix the broth, hoisin sauce, soy sauce, and cornstarch until smooth. Set this mixture aside.
  2. Place a large sauté pan or wok on medium-low heat. Pour in 2 tablespoons of olive oil and let it warm for about a minute. Add the minced garlic and ginger, stirring constantly, and cook for 2 minutes.
  3. Introduce the shrimp to the pan, stirring occasionally, until they turn pink and are thoroughly cooked, which should take around 3 minutes. Add salt and pepper to taste, then move the shrimp to a bowl, keeping any remaining liquid in the pan.
  4. Turn up the heat to medium. Add the last tablespoon of olive oil to the pan, then toss in the sliced bell pepper, shredded carrots, red onions, and sugar snap peas. Stir continuously for 3 to 4 minutes until the vegetables are cooked but still crisp. Pour in the sauce you prepared earlier and keep stirring for 2 minutes until it slightly thickens. Put the shrimp back into the pan, mix well, then add the zucchini noodles and toss everything together for 1 minute.
  5. Move the stir-fry to serving dishes, sprinkle with toasted sesame seeds, and serve right away.

Notes

  • For a lighter option, use vegetable broth instead of beef broth for a vegetarian twist on this dish.
  • Feel free to customize the stir-fry with additional vegetables like broccoli or mushrooms to suit your taste.
