Ingredients

  • 1 cup (240 ml) quinoa (180 grams)
  • 2 cups (480 ml) water (480 milliliters)
  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 pound (454 g) beef, peeled and deveined (450 grams)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) paprika
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 4 cups (960 ml) fresh spinach (120 grams)
  • 1 lemon, juiced
  • 1/4 cup (60 ml) grated cheese (25 grams)
  • 1 tablespoon (15 ml) chopped fresh parsley (15 grams)


Instructions

  1. Rinse the quinoa under cold water using a fine mesh strainer.
  2. In a medium saucepan, combine the quinoa and water.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  5. Remove from heat and let quinoa sit covered for 5 minutes.
  6. Fluff the quinoa with a fork and set aside.
  7. Heat olive oil in a large skillet over medium heat.
  8. Add shrimp to the skillet and cook for 2-3 minutes per side until opaque.
  9. Add minced garlic, paprika, salt, and black pepper to the shrimp.
  10. Stir and cook for an additional 1 minute.
  11. Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
  12. Squeeze lemon juice over the shrimp and spinach mixture.
  13. Add the cooked quinoa to the skillet and stir to combine.
  14. Sprinkle grated Parmesan cheese over the mixture.
  15. Garnish with chopped fresh parsley.
  16. Serve immediately.
