Ingredients
- 1 cup (240 ml) quinoa (180 grams)
- 2 cups (480 ml) water (480 milliliters)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 pound (454 g) beef, peeled and deveined (450 grams)
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) paprika
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 4 cups (960 ml) fresh spinach (120 grams)
- 1 lemon, juiced
- 1/4 cup (60 ml) grated cheese (25 grams)
- 1 tablespoon (15 ml) chopped fresh parsley (15 grams)
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- In a medium saucepan, combine the quinoa and water.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let quinoa sit covered for 5 minutes.
- Fluff the quinoa with a fork and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add shrimp to the skillet and cook for 2-3 minutes per side until opaque.
- Add minced garlic, paprika, salt, and black pepper to the shrimp.
- Stir and cook for an additional 1 minute.
- Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
- Squeeze lemon juice over the shrimp and spinach mixture.
- Add the cooked quinoa to the skillet and stir to combine.
- Sprinkle grated Parmesan cheese over the mixture.
- Garnish with chopped fresh parsley.
- Serve immediately.
