Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 lb smoked sausage, sliced into 1/2-inch pieces
- 2 bell peppers, any color, chopped
- 1 large red onion, chopped
- 2 cloves garlic, minced
- 2 ears of corn, cut into 4 pieces each
- 1/4 cup olive oil
- 1 tablespoon Cajun seasoning
- 1 lemon, sliced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat your grill to medium-high or preheat your oven to 425°F (220°C).
- In a large bowl, mix the shrimp, sausage, bell peppers, red onion, garlic, and corn. Drizzle with olive oil and sprinkle with Cajun seasoning, salt, and pepper. Toss everything together to ensure even coating.
- Lay out 4 large sheets of aluminum foil. Divide the mixture evenly among the sheets, and top each with a few lemon slices.
- Fold the foil over the ingredients and crimp the edges tightly to seal, making sure each packet is closed to keep the steam inside.
- Place the packets on the grill or in the oven. Cook for about 15-20 minutes or until the shrimp are pink and opaque, and the vegetables are tender.
- Open the packets carefully, garnish with fresh parsley, and serve immediately.
