  • Unsalted butter, cold and cubed – 1/2 cup (120 ml) (113 grams)
  • Buttermilk – 3/4 cup (180 ml) (180 milliliters)
  • Cooked shrimp, chopped – 1 cup (240 ml) (about 150 grams)
  • Pimento cheese spread – 1 cup (240 ml) (about 240 grams)
  • Green onions, chopped – 2 tablespoon (30 ml) s (about 8 grams)
  • Garlic powder – 1/2 teaspoon (3 ml) (2 grams)
  • Black pepper – 1/4 teaspoon (1 ml) (1 gram)
  • Egg, beaten for egg wash – 1 large egg
  • Water – 1 tablespoon (15 ml) (15 milliliters)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine all-purpose flour, baking powder, and salt.
  3. Add cold, cubed butter to the flour mixture.
  4. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  5. Pour in the buttermilk and mix until a dough forms.
  6. Lightly flour a clean surface and turn the dough out onto it.
  7. Gently knead the dough a few times until it is smooth.
  8. Roll out the dough to about 1/4-inch (0.6 cm) thickness.
  9. Use a round biscuit cutter to cut out circles from the dough.
  10. In a small bowl, combine chopped cooked shrimp, pimento cheese, chopped green onions, garlic powder, and black pepper.
  11. Place a spoonful of the shrimp and pimento cheese mixture in the center of each dough circle.
  12. Fold the dough over the filling to form a ball, pinching edges to seal.
  13. Place the biscuit bombs on a baking sheet lined with parchment paper.
  14. In a small bowl, beat the egg with water to make an egg wash.
