Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine all-purpose flour, baking powder, and salt.
- Add cold, cubed butter to the flour mixture.
- Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Pour in the buttermilk and mix until a dough forms.
- Lightly flour a clean surface and turn the dough out onto it.
- Gently knead the dough a few times until it is smooth.
- Roll out the dough to about 1/4-inch (0.6 cm) thickness.
- Use a round biscuit cutter to cut out circles from the dough.
- In a small bowl, combine chopped cooked shrimp, pimento cheese, chopped green onions, garlic powder, and black pepper.
- Place a spoonful of the shrimp and pimento cheese mixture in the center of each dough circle.
- Fold the dough over the filling to form a ball, pinching edges to seal.
- Place the biscuit bombs on a baking sheet lined with parchment paper.
- In a small bowl, beat the egg with water to make an egg wash.
- Brush the top of each biscuit bomb with the egg wash.
- Bake in the preheated oven for 15-18 minutes, or until golden brown.
