Description

A quick and flavorful stir-fry featuring juicy shrimp and vibrant bell peppers, perfect for busy weeknight meals.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 bell peppers, sliced (any colors)
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving


Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add sliced bell peppers and stir-fry for about 2-3 minutes until they start to soften.
  3. Add garlic and ginger, and stir-fry for another minute until fragrant.
  4. Add the shrimp to the skillet, and cook until they turn pink and opaque, about 3-4 minutes.
  5. Pour in the soy sauce, stirring to coat everything evenly.
  6. Season with salt and pepper to taste.
  7. Serve hot over cooked rice or noodles.

Notes

For extra crunch, consider adding snap peas or sliced carrots. Marinating shrimp in soy sauce for 15-30 minutes before cooking enhances its flavor.
