Ingredients
- 1 pound (454 g) (450 grams) shrimp, peeled and deveined
- 1 pound (454 g) (450 grams) beef or turkey bacon, cooked and chopped
- 8 ounces (227 g) (225 grams) elbow macaroni
- 2 tablespoons (30 ml) (28 grams) vegetable oil
- 2 tablespoons (30 ml) (16 grams) all-purpose flour
- 2 cups (480 ml) (480 milliliters) almond or soy milk
- 2 cups (480 ml) (200 grams) shredded cheddar cheese
- 1 cup (240 ml) (100 grams) shredded mozzarella cheese
- 1/2 cup (120 ml) (50 grams) vegan Parmesan cheese
- 1 teaspoon (5 ml) (5 grams) garlic powder
- 1 teaspoon (5 ml) (5 grams) onion powder
- Salt, to taste
- Black pepper, to taste
- 1/2 cup (120 ml) (60 grams) breadcrumbs
- 2 tablespoons (30 ml) (8 grams) chopped fresh parsley
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions; drain and set aside.
- In a large saucepan, melt the butter over medium heat.
- Stir in the flour and cook for 1-2 minutes, until lightly golden.
- Gradually whisk in the milk, ensuring no lumps form.
- Continue to cook, stirring constantly, until the sauce thickens.
- Add the cheddar cheese and mozzarella cheese to the sauce, stirring until melted.
- Season the cheese sauce with garlic powder, onion powder, salt, and black pepper.
- Add the cooked shrimp and lobster meat to the cheese sauce; stir well.
- Combine the cooked macaroni with the seafood cheese sauce.
- Pour the macaroni mixture into a greased baking dish.
- In a bowl, mix the breadcrumbs with Parmesan cheese and parsley.
- Sprinkle the breadcrumb mixture evenly over the macaroni.
- Bake in the preheated oven for 25-30 minutes, until golden and bubbly.
- Allow to cool for a few minutes before serving.
