Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)

  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 2 cup (480 ml) s water (480 milliliters)
  • 1 cup (240 ml) quick-cooking grits (160 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1/4 cup (60 ml) butter (60 grams)
  • 1/2 cup (120 ml) sliced green onions (50 grams)
  • 2 cans refrigerated biscuit dough (about 16 biscuits total)
  • 1 egg, beaten
  • Optional : hot sauce for serving


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the shrimp to the skillet.
  4. Season the shrimp with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  5. Cook the shrimp for 3-4 minutes until pink and opaque, then set aside.
  6. In a medium saucepan, bring 2 cups of water to a boil.
  7. Gradually stir in the quick-cooking grits.
  8. Reduce heat to low and cook, stirring frequently, for 5-7 minutes until thickened.
  9. Stir in the shredded cheddar cheese and butter until melted and smooth.
  10. Remove the grits from heat and mix in the sliced green onions.
  11. Open the cans of refrigerated biscuit dough.
  12. Flatten each biscuit into a circle about 4 inches in diameter.
  13. Place a spoonful of grits mixture in the center of each biscuit.
  14. Top each with a shrimp.
  15. Fold the edges of the biscuit over the filling and pinch to seal.
  16. Arrange the filled biscuits in a ring shape on a parchment-lined baking sheet.
  17. Brush the tops of the biscuits with the beaten egg.
  18. Bake in the preheated oven for 15-18 minutes until golden brown.
