Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 8 ounces (227 g) imitation crab meat (225 grams)
  • 12 ounces (340 g) fettuccine pasta (340 grams)
  • 2 tablespoons (30 ml) vegetable oil (30 milliliters)
  • 1 cup (240 ml) coconut cream (240 milliliters)
  • 1 cup (240 ml) coconut milk (240 milliliters)
  • 1 cup (240 ml) grated vegan Parmesan cheese (100 grams)
  • 1 cup (240 ml) shredded vegan mozzarella cheese (100 grams)
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) plant-based butter (14 grams)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1 teaspoon (5 ml) black pepper (5 grams)
  • 1 teaspoon (5 ml) dried Italian seasoning (2 grams)
  • 2 tablespoons (30 ml) chopped fresh parsley (8 grams)
  • 1 tablespoon (15 ml) lemon juice (15 milliliters)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the fettuccine pasta according to package instructions; drain and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic to the skillet and sauté for 1 minute.
  5. Add shrimp to the skillet, season with salt, pepper, and Italian seasoning.
  6. Cook shrimp until pink and opaque, about 3-4 minutes per side.
  7. Remove shrimp from the skillet and set aside.
  8. In the same skillet, add unsalted butter and melt over medium heat.
  9. Add heavy cream and whole milk to the skillet, stirring to combine.
  10. Bring the mixture to a gentle simmer.
  11. Stir in Parmesan cheese until melted and smooth.
  12. Add lemon juice to the sauce and stir well.
  13. Return cooked shrimp to the skillet, along with lump crab meat.
  14. Gently mix to combine seafood with the sauce.
  15. Add cooked fettuccine pasta to the skillet, tossing to coat evenly.
  16. Transfer the pasta mixture to a greased baking dish.
  17. Sprinkle shredded mozzarella cheese evenly over the top.
