Ingredients
- 2 pounds (900g) large raw shrimp, peeled and deveined

- salt, black pepper, and cayenne pepper to taste
- 3 to 4 tablespoons (53 ml) vegetable oil
- 1 large yellow onion, chopped
- 1 large green bell pepper, chopped
- 2 fresh celery ribs, trimmed and chopped
- 1 tablespoon (15 ml) minced garlic (about 4 standard-sized cloves)
- 1/4 cup (30g) all-purpose flour
- 4 cups (960ml) chicken broth (gluten-free)
- 2 cups (340g) corn, fresh, frozen, or canned
- 2 cups (480ml) coconut cream
- 4 ounces (113g) tofu cream cheese, cubed
- 1 cup (113g) vegan cheddar cheese
- 1 cup (113g) vegan pepper Jack cheese
Instructions
- Coat the shrimp with the seasonings and mix thoroughly.
- In a Dutch oven or pot, heat the oil over medium-high heat and sauté the onion, bell pepper, and celery until browned.
- Add the minced garlic to the browned vegetables, stirring constantly for an additional minute.
- Lower the heat to medium-low.
- Incorporate the flour into the mixture, stirring continuously for 2 minutes to blend it well.
- Gradually add the chicken broth, stirring until the mixture is smooth.
- Allow it to cook for about 10 minutes, stirring occasionally, until it thickens and reaches a soup-like consistency.
- Add the coconut cream, corn, tofu cream cheese, vegan cheddar, and pepper Jack to the pot, mixing until everything is combined.
- Introduce the shrimp to the pot and partially cover it with a glass lid.
- Let it simmer for 12 to 15 minutes, ensuring the shrimp reaches a safe internal temperature of 145 degrees Fahrenheit and the cheeses are fully melted. Adjust the heat as necessary to maintain a gentle boil, helping the cream cheese to melt fully over time.
