  • 2 fresh celery ribs, trimmed and chopped
  • 1 tablespoon (15 ml) minced garlic (about 4 standard-sized cloves)
  • 1/4 cup (30g) all-purpose flour
  • 4 cups (960ml) chicken broth (gluten-free)
  • 2 cups (340g) corn, fresh, frozen, or canned
  • 2 cups (480ml) coconut cream
  • 4 ounces (113g) tofu cream cheese, cubed
  • 1 cup (113g) vegan cheddar cheese
  • 1 cup (113g) vegan pepper Jack cheese


Instructions

  1. Coat the shrimp with the seasonings and mix thoroughly.
  2. In a Dutch oven or pot, heat the oil over medium-high heat and sauté the onion, bell pepper, and celery until browned.
  3. Add the minced garlic to the browned vegetables, stirring constantly for an additional minute.
  4. Lower the heat to medium-low.
  5. Incorporate the flour into the mixture, stirring continuously for 2 minutes to blend it well.
  6. Gradually add the chicken broth, stirring until the mixture is smooth.
  7. Allow it to cook for about 10 minutes, stirring occasionally, until it thickens and reaches a soup-like consistency.
  8. Add the coconut cream, corn, tofu cream cheese, vegan cheddar, and pepper Jack to the pot, mixing until everything is combined.
  9. Introduce the shrimp to the pot and partially cover it with a glass lid.
  10. Let it simmer for 12 to 15 minutes, ensuring the shrimp reaches a safe internal temperature of 145 degrees Fahrenheit and the cheeses are fully melted. Adjust the heat as necessary to maintain a gentle boil, helping the cream cheese to melt fully over time.
