Ingredients

  • – 12 pieces (340 g) shrimp, sized 16 to 20 count, peeled, deveined, and butterflied
  • – 10 oz (285 g) broccoli florets
  • – 1/2 cup (120 ml) low sodium chicken stock, warmed
  • – 1/4 tsp (1 ml) granulated sugar (or brown sugar)
  • – 1 1/2 tbsp (23 ml) soy sauce
  • – 1/2 tsp (3 ml) dark soy sauce
  • – 1 tbsp (15 ml) vegetarian oyster sauce
  • – 1/2 tsp (3 ml) sesame oil
  • – 1/8 tsp (1 ml) white pepper
  • – 2 tbsp (30 ml) vegetable oil
  • – 2 cloves garlic, chopped
  • – 1 tbsp (15 ml) rice vinegar
  • – 1 1/2 tbsp (23 ml) cornstarch (mixed with 2 tbsp (30 ml) water into a cornstarch slurry)


Instructions

  1. Start by getting the shrimp and broccoli ready for cooking.
  2. Meanwhile, bring 4 cups of water to a boil in a medium saucepan.
  3. As the water heats up, combine the chicken stock, sugar, soy sauces, vegetarian oyster sauce, sesame oil, and white pepper, then set this mixture aside.
  4. Submerge the broccoli in the boiling water for 30 seconds, then take it out and drain it.
  5. Allow the water to return to a boil and then immerse the shrimp for 15 seconds before removing and draining them; they should be about two-thirds cooked.
  6. Place a wok on high heat. Pour 2 tablespoons of vegetable oil around the edges of the wok, add the chopped garlic, and then introduce the rice vinegar.
  7. Pour in the previously prepared chicken stock mixture.
  8. Once the sauce reaches a boil, return the shrimp and broccoli to the wok.
  9. After everything boils again, slowly incorporate the cornstarch mixture until the sauce thickens and adheres to the shrimp and broccoli.
  10. Adjust the sauce’s consistency to your liking, ensuring there is no surplus liquid, and serve with steamed white rice.

Notes

  • Use olive oil instead of vegetable oil for a healthier option when cooking.
  • Sprinkle red pepper flakes or chili paste to add a spicy kick to the shrimp and broccoli.
