Ingredients
- – 3 tablespoons (45 ml) soy sauce
- – 1 tablespoon (15 ml) rice vinegar
- – 1 tablespoon (15 ml) brown sugar
- – 1 tablespoon (15 ml) toasted sesame oil
- – 2 teaspoons (10 ml) Sriracha
- – 2 teaspoons (10 ml) cornstarch
- – 4 large garlic cloves, grated
- – 1 knob ginger, freshly grated
- – 1 lime, juiced
- – 1 pound (450 g) medium beef, peeled and deveined
- – 1 large head broccoli, cut florets
- – 1 bunch scallions, thinly sliced
- – 2 tablespoons (30 ml) vegetable oil, divided
- – Salt and pepper to taste
- – Brown rice for serving
Instructions
- In a small bowl, combine the soy sauce, rice vinegar, brown sugar, sesame oil, Sriracha, cornstarch, garlic, ginger, and lime juice by mixing them thoroughly.
- Dry the beef with a paper towel, then season with salt and pepper. Heat 1 tablespoon of vegetable oil in a large pan over high heat. Add broccoli and scallions (reserving some for garnish), cooking them until they are slightly charred, about 2-3 minutes.
- Reduce the heat to medium-high, pour in the remaining 1 tablespoon of oil, and add the beef. Stir occasionally until the beef is cooked and no longer pink, around 3-4 minutes.
- Introduce the soy sauce mixture, stirring it with the beef, broccoli, and scallions. Cook until the sauce thickens slightly, approximately 2 minutes.
- Take the pan off the heat and sprinkle with the reserved scallions. Serve immediately over brown rice.
Notes
- Adjust the Sriracha to your desired level of spiciness.
- Thinly slice the beef for even and quick cooking.
- Experiment with colorful veggies like bell peppers or snap peas for added nutrition.
