Ingredients

  • – 3 tablespoons soy sauce (45 ml)
  • – 1 tablespoon rice vinegar (15 ml)
  • – 1 tablespoon (15 ml) brown sugar
  • – 1 tablespoon (15 ml) vegetable oil
  • – 2 teaspoons (10 ml) Sriracha
  • – 2 teaspoons (10 ml) cornstarch
  • – 4 large garlic cloves, grated
  • – 1 knob ginger, freshly grated
  • – Juice of 1 lime
  • – 1 pound (450 g) medium shrimp, peeled and deveined
  • – 1 large head broccoli, cut into florets
  • – 1 bunch scallions, thinly sliced
  • – 2 tablespoons (30 ml) olive oil, divided
  • – Salt and pepper, to taste
  • – Brown rice, for serving


Instructions

  1. In a small bowl, combine soy sauce, rice vinegar, brown sugar, vegetable oil, Sriracha, cornstarch, garlic, ginger, and lime juice, and whisk until smooth.
  2. Dry the shrimp with a paper towel, then sprinkle with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil on high. Add broccoli and scallions, keeping some scallions for later, and cook until they are slightly charred, about 2-3 minutes.
  3. Reduce the heat to medium-high, pour in the remaining tablespoon of olive oil, and add the shrimp. Stir occasionally and cook until the shrimp turn pink and are fully cooked, approximately 3-4 minutes.
  4. Pour the soy sauce mixture into the pan, and mix it with the shrimp, broccoli, and scallions. Cook until the sauce thickens a bit, about 2 minutes. Take off the heat and sprinkle with the reserved scallions. Serve promptly over brown rice.
