Ingredients

  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) cumin (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 2 ripe avocados, diced
  • 2 cups (480 ml) cooked rice (370 grams)
  • 1 lime, juiced
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup (60 ml) fresh cilantro, chopped (15 grams)
  • 1 jalapeño, seeded and finely chopped
  • 1 tablespoon (15 ml) lime juice (15 milliliters)
  • 1/4 cup (60 ml) Greek yogurt (60 grams)
  • 1 tablespoon (15 ml) hot sauce (15 milliliters)
  • 1 tablespoon (15 ml) lime juice (15 milliliters)


Instructions

  1. In a bowl, combine shrimp, olive oil, chili powder, garlic powder, cumin, salt, and pepper. Mix well to coat shrimp.
  2. Heat a skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until opaque and cooked through. Remove from heat.
  3. In a separate bowl, combine diced mango, red onion, cilantro, jalapeño, and 1 tablespoon lime juice. Mix to create mango salsa.
  4. In a small bowl, mix mayonnaise, sriracha sauce, and 1 tablespoon lime juice to create the lime-chili sauce.
  5. Divide cooked rice among serving bowls.
  6. Top rice with cooked shrimp, diced avocado, and mango salsa.
  7. Drizzle lime-chili sauce over the top of each bowl.
  8. Squeeze fresh lime juice over each bowl before serving.
