Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined, chopped (450 g)
  • 1/2 pound beef sausage, sliced (225 g)
  • 1 teaspoon smoked paprika (5 g)
  • 1/2 teaspoon cayenne pepper (optional, 2.5 g)
  • 1 teaspoon dried thyme (5 g)
  • Salt and black pepper to taste
  • 1 cup cooked rice (185 g)
  • 1/2 cup diced tomatoes, drained (120 ml)
  • 1/2 cup shredded mozzarella cheese, divided (60 g)
  • 4 large bell peppers, tops cut off and seeds removed
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onion and sauté until translucent, about 3-4 minutes.
  4. Stir in minced garlic and cook for 1 minute.
  5. Add chopped shrimp and sliced andouille sausage to the skillet.
  6. Cook until shrimp are opaque and sausage is lightly browned, about 5-6 minutes.
  7. Stir in smoked paprika, cayenne pepper, dried thyme, salt, and black pepper.
  8. Add cooked rice and diced tomatoes to the skillet, mixing well.
  9. Remove the skillet from heat and stir in half of the shredded cheddar cheese.
  10. Place bell peppers in a baking dish, open side up.
  11. Stuff each bell pepper with the shrimp and sausage mixture.
  12. Sprinkle the remaining cheddar cheese on top of each stuffed pepper.
  13. Cover the baking dish with aluminum foil.
  14. Bake in the preheated oven for 25-30 minutes.
  15. Remove the foil and bake for an additional 10 minutes, until cheese is bubbly.
  16. Remove from the oven and let cool slightly.
  17. Garnish with chopped fresh parsley before serving.
