Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound shrimp, peeled and deveined, chopped (450 g)
- 1/2 pound beef sausage, sliced (225 g)
- 1 teaspoon smoked paprika (5 g)
- 1/2 teaspoon cayenne pepper (optional, 2.5 g)
- 1 teaspoon dried thyme (5 g)
- Salt and black pepper to taste
- 1 cup cooked rice (185 g)
- 1/2 cup diced tomatoes, drained (120 ml)
- 1/2 cup shredded mozzarella cheese, divided (60 g)
- 4 large bell peppers, tops cut off and seeds removed
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add chopped shrimp and sliced andouille sausage to the skillet.
- Cook until shrimp are opaque and sausage is lightly browned, about 5-6 minutes.
- Stir in smoked paprika, cayenne pepper, dried thyme, salt, and black pepper.
- Add cooked rice and diced tomatoes to the skillet, mixing well.
- Remove the skillet from heat and stir in half of the shredded cheddar cheese.
- Place bell peppers in a baking dish, open side up.
- Stuff each bell pepper with the shrimp and sausage mixture.
- Sprinkle the remaining cheddar cheese on top of each stuffed pepper.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes, until cheese is bubbly.
- Remove from the oven and let cool slightly.
- Garnish with chopped fresh parsley before serving.
