Ingredients

  • 1 pound (454 g) (450 grams) shrimp, peeled and deveined
  • 8 ounce (227 g) s (225 grams) cream cheese, softened
  • 1 cup (240 ml) (240 milliliters) heavy cream
  • 1 cup (240 ml) (100 grams) grated Parmesan cheese
  • 2 tablespoon (30 ml) s (30 grams) unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon (5 ml) (5 grams) salt
  • 1 teaspoon (5 ml) (5 grams) black pepper
  • 1 tablespoon (15 ml) (15 milliliters) olive oil
  • 8 refrigerated biscuit dough pieces
  • 1 tablespoon (15 ml) (8 grams) fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1 minute.
  4. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  5. Remove shrimp from the skillet and set aside.
  6. In the same skillet, add butter and melt over medium heat.
  7. Pour in the heavy cream and stir to combine.
  8. Add cream cheese and stir until melted and smooth.
  9. Stir in grated Parmesan cheese, salt, and black pepper.
  10. Cook the Alfredo sauce until thickened, about 3-5 minutes.
  11. Return cooked shrimp to the skillet and mix well with the sauce.
  12. Remove the skillet from heat and let the mixture cool slightly.
  13. Roll out each biscuit dough piece into a 5-inch circle.
  14. Spoon a portion of the shrimp Alfredo mixture onto each dough circle.
  15. Fold the dough over the filling to form a half-moon shape.
  16. Press the edges with a fork to seal the pockets.
  17. Place the biscuit pockets on a baking sheet lined with parchment paper.
  18. Bake in the preheated oven for 15-18 minutes, until golden brown.
  19. Remove from the oven and let cool for a few minutes.
  20. Sprinkle chopped fresh parsley over the biscuit pockets before serving.
