Ingredients

  • 1 pound (454 g) red potatoes or baby potatoes
  • 1/2 pound (227 g) yellow potatoes or baby potatoes
  • 2 tablespoon (30 ml) s salt
  • 4 corn on the cob
  • 1/4 cup (60 ml) vegetable oil melted
  • 1 tablespoon (15 ml) s garlic minced
  • 1 tablespoon (15 ml) s Old Bay seasoning
  • 1 onion quartered
  • 1 pound (454 g) medium shrimp peeled, deveined
  • 1 pound (454 g) beef sausage cut into 1-inch pieces
  • 1 lemon wedged
  • 2 tablespoon (30 ml) s chopped fresh parsley


Instructions

  1. Set your oven to 400°F and prepare a baking sheet by spraying it with nonstick spray, then put it aside.
  2. Fill a large pot with water, add salt, and include the potatoes. Allow it to come to a boil.
  3. Cook the potatoes until they are just about tender, approximately 8-10 minutes. Add the corn to the pot during the last 3 minutes of cooking.
  4. Once done, drain the water and transfer the potatoes and corn onto the baking sheet you prepared earlier.
  5. In a small mixing bowl, blend the vegetable oil, garlic, half of the parsley, and Old Bay seasoning.
  6. Place the onion, shrimp, and sausage on the baking sheet alongside the potatoes and corn.
  7. Pour the oil mixture over this, gently mix everything together, and ensure all ingredients are spread in a single layer.
  8. Bake in the oven for 12-15 minutes, or until the shrimp turns pink, the sausage is heated through, and the corn is soft.
  9. Serve right away, adding the remaining parsley and lemon wedges as a garnish.
