Ingredients

  • 1 lb salmon fillets (450g)
  • 8 oz rice noodles (225g)
  • 2 tablespoons soy sauce (30ml)
  • 1 tablespoon sesame oil (15ml)
  • 1 tablespoon fresh ginger, grated (15g)
  • 2 cloves garlic, minced
  • 2 tablespoons honey (30g)
  • 1 tablespoon rice vinegar (15ml)
  • 1 tablespoon lime juice (15ml)
  • 1 tablespoon vegetable oil (15ml)
  • 1 tablespoon (15 ml) sesame seeds
  • 3 green onions, sliced
  • 1 cup shredded carrots (100g)
  • 1 cup snap peas (100g)
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. In a small bowl, mix together soy sauce, sesame oil, grated ginger, minced garlic, honey, rice vinegar, and lime juice.
  4. Brush the salmon fillets with half of the sauce mixture.
  5. Season the salmon with salt and pepper to taste.
  6. Bake the salmon in the oven for 12-15 minutes, or until cooked through.
  7. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  8. Heat vegetable oil in a large skillet over medium heat.
  9. Add shredded carrots and snap peas to the skillet and stir-fry for 3-4 minutes.
  10. Add cooked rice noodles to the skillet with the vegetables.
  11. Pour the remaining sauce over the noodles and vegetables, stirring to combine.
  12. Remove the salmon from the oven and let it cool slightly.
  13. Break the salmon into bite-sized pieces and add to the noodle mixture.
  14. Toss everything gently to combine.
  15. Sprinkle sesame seeds and sliced green onions over the dish.
  16. Serve warm.
