- – 1/4 cup (60 g) black and white sesame seeds
- – pinch of kosher salt
- – fresh black pepper, to taste
- – 5 cups (120 g) baby arugula
- – 1 tablespoon (15 ml) minced ginger
- – 1 tablespoon (15 ml) minced scallion
- – 1 tablespoon (15 ml) minced garlic
- – 1/2 cup (120 ml) balsamic vinegar
- – 1/4 cup (60 ml) apple cider vinegar
- – 1/4 cup (60 ml) soy sauce or gluten-free tamari
- – 1 1/2 tbsp (22.5 ml) honey
- – 2 teaspoons (10 ml) toasted sesame oil
- – 1 teaspoon (5 ml) mustard
Instructions
- Coat the tuna steaks with 1 teaspoon of sesame oil, then season with a pinch of salt and some fresh black pepper.
- Spread the sesame seeds on a medium plate. Press the entire surface of each steak into the seeds to coat thoroughly.
- Warm a skillet over high heat. Once it’s very hot, add the tuna steaks and sear them for 1 to 2 minutes per side, adjusting for thickness. Transfer to a plate once done.
- In the meantime, assemble the salad and prepare the soy vinaigrette.
- Cut the tuna steaks into 16 slices and arrange them over the baby arugula.
- Pour the vinaigrette over the top before serving.
Notes
- Consider adding sesame seeds to the salad for a more intense sesame flavor.
- Adjust the amount of honey in the vinaigrette to your taste preference.
- Enhance the garlic flavor by sautéing minced garlic in olive oil before adding it to the vinaigrette.
