Ingredients

  • – 20 ounces (567 g) yellowfin tuna
  • – 1 teaspoon (5 ml) toasted sesame oil
  • – 1/4 cup (60 g) black and white sesame seeds
  • – pinch of kosher salt
  • – fresh black pepper, to taste
  • – 5 cups (120 g) baby arugula
  • – 1 tablespoon (15 ml) minced ginger
  • – 1 tablespoon (15 ml) minced scallion
  • – 1 tablespoon (15 ml) minced garlic
  • – 1/2 cup (120 ml) balsamic vinegar
  • – 1/4 cup (60 ml) apple cider vinegar
  • – 1/4 cup (60 ml) soy sauce or gluten-free tamari
  • – 1 1/2 tbsp (22.5 ml) honey
  • – 2 teaspoons (10 ml) toasted sesame oil
  • – 1 teaspoon (5 ml) mustard


Instructions

  1. Coat the tuna steaks with 1 teaspoon of sesame oil, then season with a pinch of salt and some fresh black pepper.
  2. Spread the sesame seeds on a medium plate. Press the entire surface of each steak into the seeds to coat thoroughly.
  3. Warm a skillet over high heat. Once it’s very hot, add the tuna steaks and sear them for 1 to 2 minutes per side, adjusting for thickness. Transfer to a plate once done.
  4. In the meantime, assemble the salad and prepare the soy vinaigrette.
  5. Cut the tuna steaks into 16 slices and arrange them over the baby arugula.
  6. Pour the vinaigrette over the top before serving.

Notes

  • Consider adding sesame seeds to the salad for a more intense sesame flavor.
  • Adjust the amount of honey in the vinaigrette to your taste preference.
