Description

A delightful seafood dish combining seared white fish with a rich creamy spinach sauce, perfect for summer gatherings.


Ingredients

  • 2 white fish fillets, about 6 ounces each (cod, halibut, or snapper)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 1/2 cup sun-dried tomatoes, drained and roughly chopped
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream or half-and-half
  • 2 tablespoons fresh parsley or chives, chopped (for garnish)


Instructions

  1. Pat the fish fillets very dry with paper towels.
  2. Season both sides of the fish with salt, black pepper, and dried Italian seasoning.
  3. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  4. Carefully place the fish fillets, seasoned side down, into the hot skillet. Sear for 3-4 minutes without moving them.
  5. Gently flip the fish fillets. Add the minced garlic, fresh spinach, and chopped sun-dried tomatoes to the skillet around the fish.
  6. Let the spinach wilt for 1-2 minutes.
  7. Pour in the chicken or vegetable broth and the heavy cream, and reduce the heat to medium-low.
  8. Let the fish cook in the sauce for another 3-5 minutes, until it is opaque and flakes easily with a fork.
  9. Remove from heat, spoon the creamy spinach sauce over the fish, and garnish with parsley or chives.
