Ingredients
- Salmon fillets, 4 pieces (about 170 grams each)
- Salt, 1 teaspoon (5 ml) (5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (1 gram)
- Olive oil, 2 tablespoons (30 ml) (30 milliliters)
- Orzo pasta, 1 cup (240 ml) (200 grams)
- Lemon zest, 1 tablespoon (15 ml) (6 grams)
- Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
- Chicken broth, 2 cups (480 ml) (480 milliliters)
- Garlic, 2 cloves, minced
- Fresh parsley, 1/4 cup (60 ml), chopped (15 grams)
- Butter, 2 tablespoons (30 ml) (28 grams)
- Feta cheese, crumbled, 1/4 cup (60 ml) (25 grams)
- Water, 1 cup (240 ml) (240 milliliters)
Instructions
- Season the salmon fillets with salt and black pepper on both sides.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Place the salmon fillets in the skillet, skin side down.
- Cook the salmon for 4-5 minutes on each side until seared and cooked through.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Pour in the chicken broth and water, bringing it to a boil.
- Stir in the orzo pasta and reduce the heat to medium.
- Cook the orzo for 8-10 minutes, stirring occasionally, until tender and liquid is absorbed.
- Add the lemon zest, lemon juice, and butter to the orzo.
- Stir in the chopped fresh parsley and grated Parmesan cheese.
- Mix well until the butter and cheese are melted and the orzo is creamy.
- Serve the seared salmon over the lemon orzo.
