Ingredients

  • Salmon fillets, 4 pieces (about 170 grams each)
  • Salt, 1 teaspoon (5 ml) (5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Orzo pasta, 1 cup (240 ml) (200 grams)
  • Lemon zest, 1 tablespoon (15 ml) (6 grams)
  • Lemon juice, 2 tablespoons (30 ml) (30 milliliters)
  • Chicken broth, 2 cups (480 ml) (480 milliliters)
  • Garlic, 2 cloves, minced
  • Fresh parsley, 1/4 cup (60 ml), chopped (15 grams)
  • Butter, 2 tablespoons (30 ml) (28 grams)
  • Feta cheese, crumbled, 1/4 cup (60 ml) (25 grams)
  • Water, 1 cup (240 ml) (240 milliliters)


Instructions

  1. Season the salmon fillets with salt and black pepper on both sides.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Place the salmon fillets in the skillet, skin side down.
  4. Cook the salmon for 4-5 minutes on each side until seared and cooked through.
  5. Remove the salmon from the skillet and set aside.
  6. In the same skillet, add the remaining 1 tablespoon of olive oil.
  7. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  8. Pour in the chicken broth and water, bringing it to a boil.
  9. Stir in the orzo pasta and reduce the heat to medium.
  10. Cook the orzo for 8-10 minutes, stirring occasionally, until tender and liquid is absorbed.
  11. Add the lemon zest, lemon juice, and butter to the orzo.
  12. Stir in the chopped fresh parsley and grated Parmesan cheese.
  13. Mix well until the butter and cheese are melted and the orzo is creamy.
  14. Serve the seared salmon over the lemon orzo.
