Ingredients

  • – 4 skinless salmon fillets
  • – 1 tsp (5 ml) salt – divided
  • – 1 tsp (5 ml) coarsely ground black pepper – divided
  • – 1 tsp (5 ml) sweet paprika
  • – 1 tsp (5 ml) garlic powder
  • – 1 tbsp (15 ml) olive oil
  • – 1 tsp (5 ml) vegetable oil
  • – 1 yellow onion – finely chopped
  • – 3 garlic cloves – minced
  • – 1 cup (240 ml) dry orzo pasta
  • – 1 tsp (5 ml) dried thyme
  • – 3 cups (720 ml) vegetable broth
  • – 5 ounces (140 g) baby spinach
  • – juice from 1/2 lemon
  • – ½ cup (50 g) grated alternative cheese
  • – freshly ground black pepper – for serving
  • – chili flakes – for serving


Instructions

  1. Prepare everything before beginning to cook: Grate the alternative cheese, chop the onion finely, and mince the garlic cloves. Use a paper towel to dry the salmon fillets. Sprinkle both sides with garlic powder, sweet paprika, and half a teaspoon each of salt and pepper.
  2. In a large nonstick skillet, warm olive oil and vegetable oil over medium-high heat. Place the salmon fillets in the skillet and cook each side for 3-4 minutes until seared. Take them out of the skillet and keep them aside.
  3. Turn the heat to medium and add the garlic and onion. Sauté them until they become soft and aromatic, roughly 2 minutes. Mix in the dried thyme along with the remaining salt and pepper. Add the orzo and toast it for 1 minute.
  4. Add the vegetable broth and bring it to a boil. Lower the heat to medium-low to maintain a simmer. Let it cook uncovered, stirring occasionally to avoid sticking, until the orzo is nearly cooked and most of the liquid has evaporated, about 8 minutes.
  5. Introduce the baby spinach, stir, and let it simmer until it wilts, approximately 2 minutes. Mix in the lemon juice and grated alternative cheese. Add more broth if necessary. Taste and adjust the salt as needed.
  6. Place the salmon back into the skillet and let it simmer for 2-3 minutes or until the salmon is warmed through.
  7. Finish with a sprinkle of freshly ground black pepper and chili flakes. Enjoy your meal!
