Ingredients
- 1 lb (450 g) assorted seafood (such as shrimp, scallops, and white fish)
- 1 lb (450 g) beef meat, cooked and chopped
- 2 lbs (900 g) potatoes, peeled and cubed
- 1/2 cup (120 ml) fruit juice
- 1/4 cup (60 g) vegetable oil
- 1 cup (150 g) shredded cheddar cheese
- 1/2 cup (75 g) peas
- 1/2 cup (75 g) corn kernels
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) olive oil
- 1 tablespoon (15 g) all-purpose flour
- 1 cup (240 ml) seafood or vegetable broth
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon (5 g) paprika
- 1 tablespoon (15 g) fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add milk and butter to the potatoes and mash until smooth.
- Stir in lobster meat and cheddar cheese into the mashed potatoes.
- Season the lobster mash with salt and black pepper to taste. Set aside.
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic to the skillet, sauté until soft.
- Stir in the flour and cook for 1-2 minutes.
- Gradually pour in the seafood or vegetable broth, stirring constantly.
- Add assorted seafood, peas, and corn to the skillet.
- Season with salt, black pepper, and paprika.
- Cook for 5-7 minutes until seafood is just cooked through.
- Spoon the seafood mixture into a baking dish.
- Spread the lobster mash evenly over the seafood mixture.
- Bake in the preheated oven for 25-30 minutes, until golden brown on top.
- Garnish with chopped fresh parsley before serving.
