Description
A refreshing seafood salad featuring shrimp and calamari with a zesty dressing, perfect for summer gatherings.
Ingredients
- 1 lb fresh shrimp
- 1 lb calamari
- 1 lemon, juiced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Start by cleaning the shrimp and calamari and cooking them in boiling water for 2–3 minutes until just done. Drain and let cool.
- In a large bowl, combine chopped cherry tomatoes, diced cucumber, and chopped parsley.
- In a separate small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
- Add the cooled shrimp and calamari to the vegetable mixture, pour the dressing over it, and toss everything to combine.
- Serve chilled or at room temperature, garnished with additional parsley if desired.
Notes
For variety, you can substitute calamari with scallops or add chopped nuts for extra crunch.
