Description

A refreshing seafood salad featuring shrimp and calamari with a zesty dressing, perfect for summer gatherings.


Ingredients

  • 1 lb fresh shrimp
  • 1 lb calamari
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Start by cleaning the shrimp and calamari and cooking them in boiling water for 2–3 minutes until just done. Drain and let cool.
  2. In a large bowl, combine chopped cherry tomatoes, diced cucumber, and chopped parsley.
  3. In a separate small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
  4. Add the cooled shrimp and calamari to the vegetable mixture, pour the dressing over it, and toss everything to combine.
  5. Serve chilled or at room temperature, garnished with additional parsley if desired.

Notes

For variety, you can substitute calamari with scallops or add chopped nuts for extra crunch.
