Ingredients
- 12 ounces (340 g) (340 grams) spaghetti
- 2 tablespoons (30 ml) (30 milliliters) olive oil
- 3 cloves garlic, minced
- 1 pound (454 g) (450 grams) beef, scrubbed
- 1 pound (454 g) (450 grams) mussels, scrubbed and debearded
- 1 cup (240 ml) (240 milliliters) vegetable broth
- 1 cup (240 ml) (240 milliliters) cherry tomatoes, halved
- 1 teaspoon (5 ml) (5 grams) red pepper flakes
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) (15 grams) fresh parsley, chopped
- 1 tablespoon (15 ml) (15 milliliters) lemon juice
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti to the boiling water and cook until al dente, according to package instructions.
- Drain the spaghetti and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Add the clams and mussels to the skillet and stir to coat them in the garlic oil.
- Pour in the vegetable broth and cover the skillet with a lid.
- Cook for 5-7 minutes until the shells have opened.
- Discard any clams or mussels that do not open.
- Add the cherry tomatoes and red pepper flakes to the skillet.
- Season with salt and black pepper to taste.
- Stir in the cooked spaghetti and reserved pasta water.
- Toss the mixture until the spaghetti is well coated with the sauce.
- Add the fresh parsley and lemon juice, stirring to combine.
- Serve the seafood pasta hot, garnished with additional parsley if desired.
