Ingredients

  • 12 ounces (340 g) (340 grams) spaghetti
  • 2 tablespoons (30 ml) (30 milliliters) olive oil
  • 3 cloves garlic, minced
  • 1 pound (454 g) (450 grams) beef, scrubbed
  • 1 pound (454 g) (450 grams) mussels, scrubbed and debearded
  • 1 cup (240 ml) (240 milliliters) vegetable broth
  • 1 cup (240 ml) (240 milliliters) cherry tomatoes, halved
  • 1 teaspoon (5 ml) (5 grams) red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) (15 grams) fresh parsley, chopped
  • 1 tablespoon (15 ml) (15 milliliters) lemon juice


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti to the boiling water and cook until al dente, according to package instructions.
  3. Drain the spaghetti and set aside, reserving 1/2 cup of the pasta water.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Add the clams and mussels to the skillet and stir to coat them in the garlic oil.
  7. Pour in the vegetable broth and cover the skillet with a lid.
  8. Cook for 5-7 minutes until the shells have opened.
  9. Discard any clams or mussels that do not open.
  10. Add the cherry tomatoes and red pepper flakes to the skillet.
  11. Season with salt and black pepper to taste.
  12. Stir in the cooked spaghetti and reserved pasta water.
  13. Toss the mixture until the spaghetti is well coated with the sauce.
  14. Add the fresh parsley and lemon juice, stirring to combine.
  15. Serve the seafood pasta hot, garnished with additional parsley if desired.
