A vibrant Seafood Pasta Salad combining tender shrimp and succulent crab meat with fresh vegetables, perfect for summer gatherings.
Ingredients
- 8 oz pasta (fusilli or rotini)
- 1 cup crab meat
- 1 cup cooked and peeled shrimp
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 1/2 cup bell pepper (diced)
- 1/4 cup red onion (finely chopped)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions; drain and let it cool.
- In a large bowl, combine the crab meat, shrimp, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a separate bowl, mix together the mayonnaise, sour cream, lemon juice, salt, and pepper.
- Add the cooled pasta to the seafood and veggies, then pour the dressing over the top.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
- Garnish with fresh parsley and serve as a side or main course.
Notes
Chilling the salad longer enhances the flavors. Adjust seasoning as per taste before serving.
