A vibrant seafood pasta salad featuring crab, shrimp, and fresh vegetables, all coated in a creamy, zesty dressing.
Ingredients
- 2 lbs rotini pasta (cooked, drained, and cooled)
- 2 peppers (red, yellow, or orange) (seeded & diced)
- 1 bunch green onions (thinly sliced)
- 2 cups grape tomatoes (halved lengthwise)
- 16 oz container lump crab meat (drained)
- 1/2 cup imitation crab meat (chopped & flaked apart, optional)
- 2 packets ranch dressing mix
- 1/2 cup zesty Italian dressing
- 2 1/3 cups mayo
- 12 oz bag frozen salad shrimp (thawed & drained)
Instructions
- Gather all your ingredients in an extra-large mixing bowl.
- Add the cooked rotini pasta, diced peppers, green onions, grape tomatoes, lump crab meat, and flaked imitation crab meat if using.
- Sprinkle in the ranch dressing mix and stir to combine.
- Pour in the zesty Italian dressing and mayo, then stir well until everything is evenly combined.
- Cover the bowl and chill in the refrigerator for at least 120 minutes.
- When ready to serve, give it a gentle stir and enjoy.
