- 1 lb (454 g) peeled and deveined shrimp or 1 lb (454 g) sea scallops, your choice
- 3 tablespoon (45 ml) s vegetable oil
- 1 small shallot, finely minced
- 3 cloves garlic, mashed into a paste (or finely minced)
- 2 tablespoon (30 ml) s fresh minced parsley, for garnish
Instructions
- Warm vegetable oil in a sizable frying pan over medium-high heat.
- When the oil starts to shimmer, introduce the mashed garlic and minced shallot, stirring for a minute or two until they become slightly tender.
- Add your choice of seafood: If using shrimp, cook for 2-3 minutes until they change to a pink hue.
- If opting for scallops, cook for 3-5 minutes until they become opaque.
- After the seafood is fully cooked, transfer it to a plate and cover it.
- Pour grape juice into the pan with the remaining oil and heat for one or two minutes.
- Drizzle the warm sauce over the seafood, sprinkle with fresh parsley, and serve.
