A heartwarming comfort dish combining shrimp, rice, and vegetables infused with aromatic spices.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup rice
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 1 onion, diced
- 2 cups chicken or vegetable broth
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the onions, bell peppers, celery, and garlic. Sauté until the vegetables are soft.
- Stir in the shrimp and Cajun seasoning, cooking until the shrimp turns pink.
- Add the rice to the skillet, mixing well.
- Pour in the broth, bring to a boil, then reduce heat and cover. Simmer for about 20 minutes or until the rice is cooked and the liquid has absorbed.
- Fluff with a fork, season with salt and pepper, and garnish with parsley before serving.
Notes
For creamier rice, slightly increase the amount of broth. Add jalapeños for a spicy kick.
