Description

A heartwarming comfort dish combining shrimp, rice, and vegetables infused with aromatic spices.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup rice
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the onions, bell peppers, celery, and garlic. Sauté until the vegetables are soft.
  2. Stir in the shrimp and Cajun seasoning, cooking until the shrimp turns pink.
  3. Add the rice to the skillet, mixing well.
  4. Pour in the broth, bring to a boil, then reduce heat and cover. Simmer for about 20 minutes or until the rice is cooked and the liquid has absorbed.
  5. Fluff with a fork, season with salt and pepper, and garnish with parsley before serving.

Notes

For creamier rice, slightly increase the amount of broth. Add jalapeños for a spicy kick.
