Ingredients

  • – 2 parts whole peppercorns (10g)
  • – 1 part sea salt (5g)
  • – 1 pound large shrimp (450g; shells on and deveined, with or without heads)
  • – 3 tablespoons potato starch or cornstarch (23g)
  • – 1/3 cup vegetable oil (for shallow frying) (80ml)
  • – salt and pepper mixture (to taste)
  • – 6 cloves garlic (finely chopped)
  • – 1 long hot green or red pepper (thinly sliced)


Instructions

  1. Place the whole peppercorns in a small saucepan over medium-low heat and toast them dry for 15 minutes until they release a strong aroma, being careful not to burn them by adjusting the heat if necessary. Allow them to cool completely, then grind them into a fine powder using a spice grinder or a mortar and pestle.
  2. In the same saucepan, gently heat the salt over medium heat until it becomes a light yellow shade. Once cooled, mix it with the ground pepper to create your signature salt and pepper seasoning, perfect for any dish. Moving on, this next part is straightforward.
  3. Rinse the shrimp under running water and dry them thoroughly using a paper towel. Coat them evenly with potato starch or cornstarch, whichever you prefer.
  4. Warm the oil in a small cast iron pan until it reaches 375 degrees. Place the shrimp in the oil, ensuring there’s about an inch of space between each one, and fry them in batches, cooking each side for 30 seconds. Transfer them to a plate lined with paper towels, and season them with the salt and pepper mixture to your liking.
  5. In a wok, heat 2 tablespoons of oil over medium heat. Sauté the garlic until it reaches a light golden brown color, being careful not to burn it, then remove and place it on a paper towel-lined plate to drain.
  6. Discard any excess oil from the wok, leaving about a tablespoon behind (as this dish should remain “dry”). Add the sliced peppers to the wok. Turn off the heat, reintroduce the garlic, and stir everything together for a minute.
  7. Add the shrimp to the wok, gently tossing everything for 10 seconds, and sprinkle with a little more of the salt and pepper seasoning. Serve immediately!
