Ingredients

  • – 2 parts whole peppercorns (480 ml)
  • – 1 part sea salt (240 ml)
  • – 1 pound large shrimp (450g; shells on and deveined, with or without heads)
  • – 3 tablespoons cornstarch (45g)
  • – 1/3 cup vegetable oil (for shallow frying) (80 ml)
  • – salt and pepper mixture (to taste)
  • – 6 cloves garlic (finely chopped)
  • – 1 long hot green or red pepper (thinly sliced)


Instructions

  1. Place the whole peppercorns in a small saucepan and toast them over medium-low heat for 15 minutes until they release a strong aroma. Ensure they don’t burn by adjusting the heat as necessary. Allow them to cool, then grind them into a fine powder using a spice grinder or a mortar and pestle.
  2. Using the same pan, dry roast the sea salt over medium heat until it takes on a light yellow hue. Let it cool before mixing it with the ground pepper to create your own salt and pepper blend.
  3. Wash the shrimp and thoroughly dry them with a paper towel. Coat them evenly with cornstarch.
  4. In a small cast iron pan, heat vegetable oil to 375°F (190°C). Place the shrimp in the oil with some space between each one, frying them in batches for 30 seconds on each side. Transfer them to a plate lined with paper towels and season with the salt and pepper blend to your liking.
  5. Warm 2 tablespoons of oil in a wok over medium heat. Sauté the garlic until it turns golden brown, taking care not to burn it, then place it on a paper towel-lined plate to drain.
  6. Remove most of the oil from the wok, leaving just about a tablespoon behind. Add the sliced peppers to the wok. Turn off the heat, then return the garlic to the wok, stirring everything together for a minute. Introduce the shrimp to the wok, gently mixing for 10 seconds, and sprinkle with a bit more of the salt and pepper mixture. Serve immediately!

Notes

  • Ensure the shrimp are completely dry before coating with cornstarch to achieve a crispy texture when frying.
  • Adjust the amount of salt and pepper in the mixture to suit your personal preference for seasoning.
  • Be careful when toasting the sea salt to prevent it from burning and affecting the flavor of the dish.
