Ingredients
- 2 tbsp. vegetable oil (30 ml), plus more for the baking sheet
- 2 tsp (10 ml). chipotle chile powder
- 2 tsp (10 ml). honey
- 1 garlic clove, grated
- Grated zest and juice of 2 limes (about 60 ml), plus wedges for serving
- 1 1/2 tsp (8 ml). kosher salt
- 1/2 tsp (3 ml). black pepper
- 1 1/2 lb. (680 g) beef steak (in one piece)
- 1/3 c. (80 ml) plain Greek yogurt
- 1/4 c. (60 ml) fresh dill
- 4 scallions, roughly chopped
- 1 (10-ounce) bag of shredded slaw mix
- 12 fajita-sized flour tortillas, warmed
- Sliced avocado and thinly sliced radishes, for topping
Instructions
- Set your oven to heat up to 425˚F. Coat a baking sheet with vegetable oil. In a small bowl, mix together the chipotle chile powder, honey, grated garlic, the zest and juice from one lime, 1 tablespoon of vegetable oil, 1 teaspoon of kosher salt, and 1/4 teaspoon of black pepper.
- Lay the beef steak on the oiled baking sheet and coat both sides generously with the chipotle mixture.
- Roast the beef in the oven until the thickest part easily shreds with a fork and the inside is no longer pink, about 10 to 12 minutes.
- While the beef is cooking, blend together the Greek yogurt, fresh dill, scallions, the remaining tablespoon of vegetable oil, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper in a blender or food processor until smooth.
- Mix the shredded slaw with the yogurt blend in a large bowl, ensuring it’s well-coated.
- To assemble the tacos, break the beef into large chunks. Place a few pieces of beef and a portion of the slaw onto each warmed tortilla, then add avocado slices and radish slices on top. Serve with lime wedges on the side.
Notes
- Enhance the slaw’s tanginess by adding lime juice to the yogurt blend before mixing with the shredded slaw mix.
- Marinate the beef in the chipotle mixture for at least 30 minutes before roasting to intensify its flavor.
- Add extra spiciness by sprinkling a bit more chipotle chile powder on the beef before serving.
