Ingredients
- 1 lb salmon fillets
- 8 small corn tortillas
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/2 cup chopped cilantro
- Juice of 1 lime
- 1 avocado, sliced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your skillet over medium heat and add a drizzle of olive oil.
- Season the salmon fillets with salt and pepper, then place them in the skillet. Cook for about 3-4 minutes per side, or until cooked through.
- While the salmon cooks, prepare the slaw. Combine the shredded cabbage, shredded carrots, chopped cilantro, and lime juice in a bowl. Toss well to ensure everything is coated.
- Warm the corn tortillas in a separate pan or directly over the flame for a few seconds to make them pliable.
- Once the salmon is fully cooked, flake it into pieces.
- Assemble each taco by layering flaked salmon, fresh slaw, and avocado slices on each tortilla. Serve immediately.
